SMART MISO
Miso paste is a traditional Japanese food. For more than 1,300 years, Miso has been consumed as one of the most important culinary seasonings in Japan. Miso is produced by steaming soybeans with Koji-cultured gains such as rice, brown rice or soybeans, and sea salt. Our "MUSO from Japan" Smart Misos come from family-owned miso producers in Japan who use traditional methods. Our rich, flavorful, gourmet, vegan soy miso is now available in an easy-to-use package. Besides authentic Japanese miso soup, our Smart Miso is excellent for making authentic seasoning, salad dressing and marinade.

YAMAKI MISO
Considered the gold standard for excellent miso. Made by the revered Yamaki Company, who makes Ohsawa Nama Shoyu, its flavor is unsurpassed. With this unpasteurized miso you can rest assured that you are receiving all the nutritional benefits of this living food. High in essential amino acids and loaded with beneficial bacteria and living enzymes that aid digestion and assimilation, miso is traditionally considered to be a food that promotes good health and a long and happy life. Made with 100% organic ingredients and pure mountain spring water. It is naturally aged in cedarwood kegs through at least two summer seasons to develop its full-bodied flavor.

HATCHO MISO
Hatcho miso, made from organic soybeans, water, sea salt, and koji, originates from Okazaki, Japan, produced by Maruya Hatcho Miso Company since 1337. This authentic unpasteurized miso is aged for three years in cedarwood casks, delivering a savory, hearty flavor. Its name, meaning "eight blocks," references its proximity to Okazaki Castle, birthplace of Ieyasu Tokugawa. During the Sengoku Period, it was a favored food for samurai. Maruya Hatcho continues traditional miso-making methods, using cedar kegs placed on the earth to capture its energy. The apprentice's routine includes the labor-intensive process of hand-digging aged miso from the kegs, said to enhance the accumulated energy over time.

SOUTH RIVER MISO
South River Miso is hand-crafted and aged in wood in the centuries-old farmhouse traditon of Japan. Central to their process is the long, slow cooking of the beans by wood fire with a massive masonry stove. Their time-honored methods create the rich flavor and distinctive whole-grain texture common to all miso made before modern food processing.
South River Miso is fermented and unpasteurized, so it will continue to ferment in the jar. In warm or hot weather, the natural fermentation may cause the pressure to build up and some leakage may occur. This is normal and attests to the fact that it is a living food, loaded with beneficial probiotics. Each teaspoon contains millions of active probiotic microorganisms and enzymes which unlock the nutrition and full flavor of all foods.
