UME VINEGAR


Not truly vinegar, this is the ruby red brine from the pickling of umeboshi plums. Its year-long fermentation process brings out its fragrant, lively tartness and subtle herbal flavor. Use Ohsawa Ume Vinegar in place of soy sauce or seasonings. It is delightful in soups, salads or sprinkled on greens.

ORGANIC YAMAKI NAMA SHOYU


Its rich flavor and delicate aroma can enhance your cooking or serve at the table. For optimal enjoyment, add Ohsawa Organic Nama Shoyu as a topping to udon or soba noodles, using 2/3 to 1 tablespoon per 100g of dried noodles. Cook, rinse, and drain. It also pairs well as a dip (with Wasabi) for sushi, tofu, grilled fish, and vegetables.

ORGANIC GLUTEN FREE TAMARI

Tamari has a deep color, thick consistency, and a more complex flavor than shoyu, making it better for long cooking. A small amount adds rich taste to marinades, vegetables, stews, sauces, and salads. Our tamari is brewed in cedar kegs using traditional methods passed down through generations. It is 100% wheat-free, making it a great option for those sensitive to wheat. Use tamari for better flavor and reduced salt intake.

WHITE NAMA SHOYU

Hand crafted in Aichi, Japan with locally grown ingredients and natural mineral water, Ohsawa White Nama Shoyu is brewed with twice the wheat of regular white shoyu, resulting in a thicker, tastier "soy sauce without the soy." Enjoy it on sushi, tofu, seafood, vegetables, even on fruit.
